The submenu lets you set which Problem Metadata fields Acces should show and let you edit.
If you're not interested in a particular field, you can uncheck its menu item to reduce the clutter in Acces.
Hiding a Metadata field also prevents you from sorting your problems based on the values of that field. If you want to sort your problems based on a particular Metadata field, make sure it's shown, first.
